Step 1: Warm The Pecans: Add the chopped pecans and half the sugar to a saucepan over medium heat. Stir frequently while cooking until the pecans are slightly fragrant.
Step 2: Cook Syrup: Add the water and the remaining brown sugar to the saucepan and stir to combine and dissolve the sugar.
Bring the mixture to a simmer then reduce the heat and simmer gently over medium-low heat for around 5 minutes or until the mixture is reduced by half. Stir occasionally and turn down if bubbling furiously.



Step 3: Strain: Remove the saucepan from the heat and stir through the vanilla extract (if using).
Carefully pour the mixture through a fine mesh sieve into a bowl. Reserve the strained pecans – they are super delicious on top of ice cream, with yogurt or sprinkled on your iced coffee drinks.

Instructions

- Add the remaining sugar and all the water to the saucepan. Stir well and bring to a simmer. Reduce and simmer over a medium-low heat, stirring occasionally, for 5-10 minutes until the liquid has reduced by half.
- Remove from the heat and stir through vanilla extract (if using). Carefully strain the mixture through a fine mesh strainer into a small bowl to remove the pecans. Reserve the pecans.
- Leave the syrup to cool for a few minutes before pouring into a syrup bottle or jar, seal and store in the fridge for up to two weeks.
