This Pecan Syrup is an easy homemade coffee syrup to add a sweet nutty flavor to your coffee drinks. Perfect for cozy Fall coffee drinks - hot and cold!
Add the chopped pecans and half the brown sugar to a small saucepan. Warm over medium heat, stirring frequently, until pecans are slightly fragrant.
Add the remaining sugar and all the water to the saucepan. Stir well and bring to a simmer. Reduce and simmer over a medium-low heat, stirring occasionally, for 5-10 minutes until the liquid has reduced by half.
Remove from the heat and stir through vanilla extract (if using). Carefully strain the mixture through a fine mesh strainer into a small bowl to remove the pecans. Reserve the pecans.
Leave the syrup to cool for a few minutes before pouring into a syrup bottle or jar, seal and store in the fridge for up to two weeks.
Store the reserved pecans in a sealed container to use on pancakes, on top of breakfast cereal or sprinkled on top of your iced coffee drinks.
Notes
Don't have the heat too high when simmering the syrup as it may reduce too quickly or burn.
