Why You’ll Love This Red White And Blue Popsicles Recipe

Real Ingredients: Unlike the neon, store-bought versions that are often just sugar and food dye, these homemade popsicles are made with actual fruit (strawberries and blueberries) and natural sweeteners. It’s a sweet snack you can feel genuinely good about eating or serving to your kids.

The “Wow” Factor is Easy: While the layered look suggests you spent hours in preparation, the process is actually just three simple blending steps. The distinct red, white, and blue stripes make them look like a gourmet frozen dessert.

Versatile: This popsicle recipe is easily adjusted to suit your tastes and dietary requirements without losing that signature creamy flavor.

Ingredients

To make these fourth of July popsicles you’ll need the following ingredients. Note that you can find the specific quantities and steps in the recipe card below.

  • Strawberries: For the red layer use fresh or frozen strawberries. Raspberries are another good summer fruit option when in season. When using fruit, defrost before blending.
  • Sweeteners: I use honey to sweeten the layers, you could also use maple syrup.
  • Yogurt: A plain full fat Greek yogurt is what I use in this recipe. This gives the popsicles a lovely creamy texture. You could also use vanilla yogurt – in which case you wouldn’t need to sweeten this layer.
  • Blueberries: Our natural blue layer. No dyes used here! Use fresh or frozen (defrosted) blueberries.
  • Vanilla extract: Helps round out the flavor of the yogurt without adding too much sweetener.

How To Make Frozen Yogurt Popsicles

Here’s a quick overview of how to make red white and blue popsicles at home. For the full recipe details, including ingredients and measurements needed, scroll down to the printable recipe card below.

You will need a blender, a small bowl, and popsicle molds (with sticks) to get started.

Red layer: Combine the red layer ingredients in a blender and blend until smooth. Fill the molds 1/3 of the way and place in the freezer to firm up.

White layer: Combine your white layer ingredients and add on top of the frozen red layer. Work quickly to fill 2/3 of the way up each mold then return to the freezer for around an hour to firm up (but not freeze completely).

Blue layer: Time for the final layer. Blend the blue layer ingredients and divide between the popsicle molds. Add a popsicle stick to each mold, cover, and pop in the freezer, preferably overnight, to set.

When ready to serve, unmold by pouring warm water over the molds and ease the popsicles out gently. Enjoy immediately!

Recipe Tips For Success

Don’t rush the freezing steps: When layering, make sure the previous layer is firm enough to support the next one. If the red layer is too soft when you add the yogurt, the colors will bleed together.

Leave a little space: When pouring your final blue layer, leave about a quarter-inch of space at the top of the mold. Liquids expand as they freeze, and this prevents the popsicles from overflowing and sticking to the lid or each other.

Be patient when unmolding: When you’re ready to serve, don’t try to force the popsicles out. A quick 10–20 second dip of the bottom of the mold in warm water will melt the very outer edge just enough to let them slide out perfectly intact.

Recipe Variations

For another red white blue combination, raspberries are a great alternative for the red layer, and yogurt can be substituted for coconut milk to make a dairy free popsicle, like in these blackberry popsicles.

In fact, blackberries could be used if you don’t have blueberries, although it will have a more purple tinge. If you are looking for a brighter blue, consider using blue spirulina powder blended with yogurt for a vibrant blue alternative.

How To Store Homemade Popsicles

Leftover popsicles can be stored in the popsicle mold in the freezer.

Alternatively, for a space saving option, remove all popsicles from the molds and place them in individual sealed popsicle bags or simply wrap each popsicle in plastic wrap before stacking in the freezer.

Store popsicles in the freezer for up to 1 month.

Servings: 12 popsicles
Prep Time 20 minutes
Freezing Time 6 hours
Total Time 6 hours 20 minutes

Ingredients

RED LAYER

  • 1 cup strawberries or raspberries
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water if needed, for blending

WHITE LAYER

  • ¾ cup Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract

BLUE LAYER

  • 1 cup blueberries
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water if needed, for blending

Instructions

FOR THE RED LAYER

  • Blend the strawberries (or raspberries) with honey and a little water, until smooth.
  • Fill popsicle molds 1/3 of the way up. Place mold in the freezer for about 30 minutes to firm up.

ADD THE WHITE LAYER

  • In a small bowl combine the Greek yogurt, honey, and vanilla.
  • Add the yogurt mixture on top of the frozen red layer, filling each popsicle mold about 2/3 of the way. Return the mold to the freezer for 30-60 minutes, until firm but not solid (you still need to insert the popsicle sticks in a later step).

ADD THE BLUE LAYER

  • Blend the blueberries with honey and a little water, until smooth.
  • Add the blueberry mixture on top of the frozen white layer, filling each popsicle mold to the top. Insert popsicle sticks into the molds and return the mold to the freezer for at least 4 hours, or overnight, till frozen solid.
  • When ready to serve, run the popsicle molds under warm water for a 10-20 seconds and pull gently to release the popsicles.

Notes

Berries: Feel free to sub raspberries for strawberries – both have a vibrant color we need for the red layer. When using frozen berries, let them defrost before blending to make it easier to pour the mixture in to the molds.
Sweetener: Honey or maple syrup both work well – you need to use a liquid sweetener as it is being added to cold ingredients.
Yogurt: Full fat yogurt works best for a creamy texture. You can sub vanilla yogurt (in which case you won’t need to add the vanilla or sweetener). For a dairy free alternative you can use coconut milk.
Freezing time: This may vary depending on your freezer, but for each layer you want it to firm up enough to layer the next color, but not be so frozen that you can’t insert the popsicle stick at the end.
