These easy cold brew coffee waffles are the perfect choice for breakfast or brunch with friends. Made from pancake mix they are also super quick to prepare and taste divine.

Why I Love This Coffee Waffles Recipe

I love making (and eating) waffles, but I tend to save them for the weekend when I have a little more time to make them from scratch.

With two kids at home I often have a ready made pancake mix in the pantry. But I never thought to use it to make waffles too!

So I was pretty excited to learn how to make waffles from pancake mix and share the recipe with you here.

It literally takes 5 minutes to prepare the waffle mix and with the addition of brewed coffee, you can enjoy these delicious flavored waffles any day of the week.

The Secret To Easy Homemade Waffles

To make cold brew or espresso waffles from pancake mix all you need is a mixing bowl and a waffle maker.

I am assuming you already own a waffle maker seeing you are here ready to make my easy waffles recipe.

But if you want super crispy, thick waffles like Belgian waffles, I thought it was worth mentioning this waffle maker by Cuisinart. It is simply one of the best waffle irons around.

Similar to those found in restaurants, it has a deep 1 inch non-stick grid and a handy rotary feature to ensure the waffles are cooked evenly on both sides. Plus an indicator light will even tell you when the waffles are ready!

Ingredients For Pancake Mix Waffles And Coffee

The beauty of this coffee waffle recipe with pancake mix is just how few ingredients are required.

Yes, it is possible to make waffles from scratch. But if you are short on time and have a pancake mix in the cupboard, you can still enjoy crispy, fluffy waffles in no time. The ingredients you need are:

  • Pancake mix
  • Coffee
  • Melted butter
  • Your choice of waffle toppings

Can You Make Waffles With Pancake Mix?

Yes! The secret to making waffles with pancake mix is to increase the fat content in your pancake mix.

I do this by adding melted butter to the batter for waffles. Another alternative is vegetable or coconut oil.

Does it matter which pancake mix you use? Not at all!

We used an Aunt Jemima pancake mix for these waffles, but you can honestly use any type of pancake mix for this easy and quick waffle recipe.

Which Type Of Coffee?

Apart from adding butter, the only other waffle batter mix ingredient to turn these regular waffles into a delicious flavored waffle recipe is the coffee.

I use cold brew coffee (because I love it and often have it handy in the refrigerator). See my top picks for the best coffee for cold brew here.

But don’t worry – if you don’t have cold brew, you can use any type of coffee brewed at home – brewed, espresso, pour over, french press, stove top, even instant. They will all work equally well.

Just remember to let the coffee cool slightly before adding to your pancake mix.

Waffle Toppings

Choose your waffle toppings and prepare them. I love fresh berries with whipped cream and chocolate sauce, but the options really are endless!

How To Make Waffles With Pancake Mix

Step 1 – Prepare your ingredients and equipment. The very first step is to switch your waffle maker on to give it time to heat up. You want it hot for crispy waffles.

If you don’t have cold brew coffee on hand, brew your coffee first to allow it a few minutes to cool before adding to your pancake mix.

Melt your butter too.

Step 2 – Mix your coffee waffle ingredients. In a medium sized bowl measure 2 cups of pancake mix and add to the bowl.

Add your brewed coffee and melted butter and stir to combine.

Step 3 – Cook and enjoy. Spoon the correct amount of mix into the waffle maker. This will vary depending on your waffle maker. Don’t overfill or you will end up with a mess..

Cook your waffles until they are no longer steaming, or your waffle maker indicates they are ready.

Serve with your favorite toppings and enjoy!

Coffee Flavored Waffles Recipe Tips For Success

Ensure your waffle maker or iron is hot! Most need at least 5-10 minutes to fully heat up. This will ensure your waffles are nice and crisp.

This mix makes around 8 4-inch waffles. Depending on the size of your waffle maker you may end up with fewer waffles.

Wait for the waffles to stop steaming before removing from the waffle maker for a crispier finish.

Cold Brew Coffee Waffles From Pancake Mix

  • fresh fruit
  • whipping cream
  • chocolate sauce

Instructions
 

  • Heat your waffle maker while you prepare the ingredients.
  • Mix all waffle ingredients together to make a thick batter.
    1 cup cold brew coffee, 1/4 cup melted butter, 2 cups pancake mix
  • Spoon 1/8 of the mix into the waffle maker at a time and cook until the waffle is no longer steaming. Repeat for remaining mixture.
  • Serve with your favorite toppings and enjoy!

1. It is important to heat your waffle maker and ensure it is super hot before adding your waffle mix. This will ensure you have crispy waffles.
2. You may need to wait a few minutes between waffles to ensure the waffle maker is hot enough for each waffle.
