What Is A Lotus Biscoff Latte?

A Lotus biscoff latte combines espresso, Lotus biscoff cookie butter and milk to make an espresso based coffee drink. It is often served with Biscoff lotus cookies.

The flavored coffee drink can be served hot with frothed milk, or with ice and cold milk for an iced biscoff latte.

The biscoff iced latte became a TikTok sensation in 2020 (just like Dalgona coffee).

And while the biscoff iced coffee is tasty, the original hot biscoff latte is still my favorite way to make and drink this comforting sweet coffee recipe.

What Is So Special About Lotus Biscoff Biscuits?

Lotus biscoff biscuits were originally called Lotus cookies and were developed in the 1930s as the perfect crunchy caramelized cookie to enjoy with coffee.

Biscoff and coffee were such a popular combination that the term biscoff was coined in 1986 – by combining the words “biscuit” and “coffee” the Lotus biscuits became biscoff cookies.

The Lotus coffee biscuits were introduced to the United States in the 1990s as an airline snack and many airlines (including Delta) still serve them in flight.

Then in 2008 the popular coffee cookie became a spread and biscoff recipes became even more popular.

What You’ll Need To Make A Biscoff Cookie Butter Latte

To make this biscoff cookie butter latte recipe you will need an espresso machine and a milk frother.

Espresso machine

I love the compact Breville Bambino Plus for home baristas.

The automatic milk frother makes milk frothing so simple, even for beginners.

However if you don’t own an espresso machine, the best affordable alternatives are to use a moka pot or pod coffee machine to make espresso coffee.

Alternatively, if you have a coffee maker note you will need to brew a strong pot of coffee for the best tasting cup.

Milk frother

In terms of milk frothers, most espresso machines have an integrated frother which is perfect for the job.

But if you don’t have one, don’t worry as there are three other ways you can froth milk:

  1. With an automatic milk frother like this
  2. Using a handheld frother
  3. Frothing manually in a french press.

Biscoff Latte Recipe Ingredients

So to make our cookie butter latte recipe you will need:

Note: Be sure to use the smooth Biscoff cookie spread. There is a crunchy Biscoff spread, but it has chunks of cookie that won’t be great in your coffee.

The cookies are optional – but they are the perfect pairing for your Lotus biscoff latte!

How To Make A Lotus Biscoff Latte At Home

Below are the steps to make your cookie butter coffee.

See the recipe card below for all the ingredient quantities and process steps.

Step 1 – Line your mug with biscoff spread

The Biscoff creamy spread is quite firm, so instead of softening it in the microwave, simply smear the inside walls of your coffee mugs with the cookie butter.

The fine layer of cookie butter will gradually melt into your coffee once all ingredients are added to your mug.

Step 2 – Pull your espresso shots

Pull a double shot of espresso directly into your mug.

Tip: If you have low clearance on your espresso machine, pull your shots into a smaller glass then transfer into your mug.

If using brewed coffee, be sure to brew it strong in order to have the same impact as the espresso in your cup.

Step 3 – Froth the milk

Using either your espresso machine milk frother or standalone frother, froth your milk until textured and creamy.

Then pour the milk into your mug.

Finally, top with a sprinkle of biscoff crumb and/or serve with 1 or 2 whole cookies and enjoy!

Instructions

  1. Spread the Lotus Biscoff cookie butter around the inside walls of your mug.
