S’more Cookies With Chocolate Chips
Ingredients
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 12 tablespoons unsalted butter room temperature
- ¾ cup dark brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1½ teaspoons vanilla extract
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 18 sheets graham crackers
- 18 snack size Hersheys Chocolate Bars
Instructions
- Preheat the oven to 350℉ (175℃) and line a cookie sheet with parchment paper.
- In a large bowl add the flour, baking soda, and salt. Whisk to combine and set aside.
- In a stand mixer, beat the butter until light and fluffy. Add the dark brown sugar and granulated sugar and mix until well combined.
- Add the egg and vanilla extract and mix until just combined.
- With the speed on low, add the flour mixture, 1/2 cup at a time. Stop to scrape the sides and bottom of the bowl as necessary.
- Fold in the chocolate chips and marshmallows until just combined.
- Break each graham cracker sheet in half and line the graham cracker squares up on the prepared cookie sheet. Place a scoop of cookie dough on top of each cracker.
