  • Strawberries: Diced fresh ripe strawberries. Frozen strawberries tend to be too watery and I don’t recommend using them for this recipe.
  • Unsalted butter: Softened to room temperature. If you only have salted butter, just don’t add the extra salt to the cookie dough.
  • Brown sugar: Brown sugar gives these cookies a lovely soft chewy texture. You can use light or dark brown sugar – I use light brown sugar for this recipe.
  • Baking soda: Helps the cookies rise and spread to their final cookie shape.
  • Vanilla extract: For flavor. These cookies contain a lot of vanilla, so I recommend using the best quality vanilla extract you have for this recipe.
  • Salt: Added for flavor if you are using unsalted butter.

How To Make Strawberry Cookies

I love how quick and easy it is to make these homemade strawberry cookies. Here’s a quick overview of how to make them. For the full recipe and ingredient list, scroll down to the printable recipe card.

Step 1: Beat the butter and sugar together until smooth and creamy. Add the egg and beat until combined. Then add the vanilla, salt and baking soda and mix to combine.

Step 2: If using a stand or hand mixer reduce the speed to low and gradually add the sifted flour and beat until just combined. Don’t overmix. Using a wooden spoon fold in the strawberries and mix to combine.

Chill the dough in the fridge for at least 30 minutes – up to an hour.

Step 3: Using a cookie scoop or a spoon, form cookie dough balls and place them on a lined baking sheet. Ensure you leave a good amount of space between them to allow for spreading while baking.

The cookies are ready when they’re lightly golden on the edges but still soft in the centre.

Remove from the oven and leave to cool in the tray for 10 minutes before moving to a wire rack to cool completely.

How To Store Strawberry Cookies

Store: Leftover baked cookies should be stored in an airtight container for up to 5 days. If it’s hot outside I suggest storing them in the refrigerator.

Freezing: You can freeze the cookie dough for up to 3 months. It is best to roll the cookies first, then refrigerate them for an hour on the tray to stop them sticking together in the freezer.

Then pop the individual dough balls in a freezer bag or container. When ready to bake simply pop the frozen dough balls on a lined baking sheet and bake as per the recipe – adding a minute or two to the total baking time.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1 large egg room temperature
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • ½ cup strawberries fresh, diced

Instructions
 

  • In a large bowl, beat the butter and sugar together with a stand or hand mixer until light and creamy.
  • Add the egg and continue beating until well incorporated.
  • Add the vanilla, baking soda and salt to the mixture and beat till just combined.
  • Reduce mixer speed to low and add the flour into the mixture, then beat until just combined.
  • Use a spoon to fold the fresh strawberry pieces into the cookie dough and mix to combine.
  • Cover the dough and refrigerate for at least 30 minutes. This helps the cookies maintain their shape when cooking.
  • When you're ready to bake, preheat the oven to 350℉ (180℃). Line 2 baking sheets with parchment paper.
  • Using a cookie scoop or a tablespoon, form balls of dough the size of a walnut and place them on the baking sheet, leaving space between each cookie.
  • Bake the cookies for 15-16 minutes, or until the edges are lightly golden. Don't overcook as the cookies will continue to firm up out of the oven.
  • Leave the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

Notes

Butter: Use room temperature butter to ensure it mixes well with the sugar.
Strawberries: Use fresh strawberries diced small for the best results. Frozen strawberries tend to be too watery.
Chill the dough: Don’t skip this step! Chilling the dough helps the cookies maintain their shape during baking and prevents them spreading too much.
Don’t overbake: The cookies are ready when the edges are lightly golden. Don’t overbake as they will become dry.
Storing: Store leftover cookies in an airtight container for up to 5 days.
Freezing: Freeze the cookie dough for up to 3 months. Thaw in the fridge overnight before rolling and baking.
