This easy smores recipe combines gooey marshmallows, melted chocolate, and graham crackers into soft baked s'mores cookies. A unique twist on chocolate chip cookies, these bite sized treats are perfect for parties, picnics, or anytime you're craving something sweet.
Preheat the oven to 350℉ (175℃) and line a cookie sheet with parchment paper.
In a large bowl add the flour, baking soda, and salt. Whisk to combine and set aside.
In a stand mixer, beat the butter until light and fluffy. Add the dark brown sugar and granulated sugar and mix until well combined.
Add the egg and vanilla extract and mix until just combined.
With the speed on low, add the flour mixture, 1/2 cup at a time. Stop to scrape the sides and bottom of the bowl as necessary.
Fold in the chocolate chips and marshmallows until just combined.
Break each graham cracker sheet in half and line the graham cracker squares up on the prepared cookie sheet. Place a scoop of cookie dough on top of each cracker.
Bake for 5 minutes, then remove from the oven and add the Hershey chocolate pieces on top. Lightly press the chocolate into the cookie dough.
Return to the oven and bake for an additional 5-7 minutes until golden around the edges.
