Ingredient Notes
My Starbucks copycat pecan oat milk latte recipe includes instructions on how to make homemade pecan syrup and the tasty pecan crunch topping.
You can find the specific measurements and list of ingredients in the recipe card below, so here let’s take a look at what goes into making this Fall drink so delicious and some substitution options.
- Espresso: Use a blonde espresso for the closest flavor match to the Starbucks version.
- Oat Milk: Creates the delicious creamy base for both the drink and the dairy free cold foam. I love the barista-style oat milk varieties for extra creaminess, but you can use regular oat milk too.
- Soy Milk: Used in the cold foam to create a light and airy foam texture.
- Pecan Syrup: My homemade pecan syrup is so easy to make and has a delicious nutty flavor. The recipe below makes a good sized batch that you can store and use over several weeks.
- Vanilla Syrup: Added to the cold foam to add depth of flavor, I just use a store-bought vanilla syrup.
- Pecan Crunch: A sprinkling of sweet pecans is like the cherry on top for this drink. Completely optional, but I highly recommend it.
Ingredient Substitutions
- Espresso – If you don’t have an espresso machine, simply brew a strong batch of coffee in your coffee maker. French press and moka pot coffee are the closest substitutes to espresso coffee.
- Oat Milk – Other good dairy free milk options are almond milk. You can use whole milk in place of the plant based milks, but the drink will have a different flavor.
- Soy Milk – Replace with oat milk, almond milk or whole milk if not making a dairy free coffee.
- Vanilla Syrup – If you don’t have vanilla syrup on hand you can use vanilla extract instead. Simply adjust the quantities as listed in the notes of the recipe card.
- Pecan Syrup – While I strongly recommend you use the homemade pecan syrup in this drink, you can use a store bought syrup.

Step 1: Make the Pecan Syrup. In a saucepan, combine the water and sugar. Stir over medium heat until the sugar is fully dissolved.
Add chopped pecans and salt. Bring to a gentle simmer and cook for 7-10 minutes. Remove the saucepan from the heat and strain through a fine sieve. Let the syrup cool before using.
Tip: Keep the strained pecans to snack on later – they are super tasty!
Step 2: Prepare The Cold Foam. Combine the vanilla syrup, soy milk, and oat milk in a glass or jar. Froth using a handheld milk frother until light and airy, for about 1 minute then set aside.
Step 3: Prepare Pecan Crunch Topping. In a bowl, combine the finely chopped pecans, granulated sugar, and a pinch of salt. Toss until the pecans are coated with sugar.
Step 4: Prepare Your Drink. In a tall glass, add 2 tablespoons of the homemade pecan syrup. Add the espresso, oat milk and ice to the glass. Stir to combine and to chill the espresso.
Top your drink with a generous layer of the non-dairy cold foam. Sprinkle the pecan crunch topping over the cold foam. Enjoy immediately!
Recipe Variations
- Hot Pecan Latte: If you prefer a cozy hot pecan latte for sipping in the cooler weather, simply omit the ice and whisk your foam with warmed milk.
- Extra Strong: For strong coffee lovers, add an extra shot of espresso or more brewed coffee to the recipe.
- Pecan Heaven: Swap out the vanilla syrup in the cold foam for a tablespoon of your pecan syrup for an extra pecan-y iced latte.
Recipe Tips For Success
- Simmer the pecans on a gentle heat. You don’t want to over-reduce the syrup or burn it.
- Finely chop the pecans used in the crunchy topping. A finer pecan mixture will sit more easily on top of your foam and be a nicer drinking experience.
- Store leftover syrup. Save time prepping this drink next time by storing your leftover syrup and pecan crunch mixture.
Storage Tips
The leftover pecan syrup can be stored in an airtight container in the fridge for up to 1 month. The pecan crunch topping can be also stored in a container at room temperature for next time.
The cold foam does not store well and I recommend you make it on demand for each drink.
What To Eat With An Iced Pecan Latte
Perfectly delicious to enjoy on its own, this iced pecan coffee would also be lovely paired with:
- This easy coffee granola or a batch of cold brew waffles for breakfast.
- A slice of my coffee walnut loaf bread for morning tea.
- A couple of coffee choc chip cookies for a quick afternoon snack.
