Why You’ll Love This Birds Nest Cookies Recipe
It’s hard not to fall for a dessert that looks so pretty and requires about as much effort as making a bowl of cereal! But here are three more reasons why you’re going to love these coconut birds nest cookies:
- No Bake Convenience: These treats are a total lifesaver because they require zero baking. With only 15 minutes of prep time, you can whip these up between egg hunts or while the main course is in the oven.
- Minimal Simple Ingredients: With just 4 ingredients, this is an approachable, budget friendly recipe that still delivers maximum flavor.
- Maximum Wow Factor: Whether it’s for a classroom party, family brunch, or to sell at a Spring Bake Sale, these nests bring a festive touch to your celebrations.

Coconut Nests Ingredients
To make these no bake coconut nests, you’ll need the following ingredients. The specific quantities and steps are listed in the recipe card below.

- Shredded coconut: I recommend using shredded coconut over the other forms of coconut available. Desiccated coconut is a little too fine and flaked coconut is too chunky for this recipe.
- Sweetened condensed milk
- White chocolate: Melts are easiest to use, but a chocolate bar broken into pieces before melting also works.
- Mini chocolate eggs: Cadbury mini eggs are my absolute favorite at Easter time, but any generic brand is fine if you can’t source them – as long as they are small enough to fit on your nest cookies.
How To Make Spring Birds Nest Cookies
Here’s a quick overview of how to make birds nest cookies with coconut. For the full recipe details, including ingredients and measurements needed, scroll down to the printable recipe card below.
You will need a baking sheet and large mixing bowl to get started.
Make the mixture: Combine the shredded coconut, condensed milk, and melted white chocolate in a large bowl. Mix well to combine and to form a sticky dough.
Scoop tablespoons of dough and roll with your hands in to balls.

Prepare the balls: Put the extra coconut in a wide bowl or tray and roll each ball in the coconut to coat. Place on the baking sheet or plate.

Make the nests: Use a teaspoon to create a small indent in the centre of each ball. Gently press three mini eggs into the centre of each ball and place on the baking sheet.

Refrigerate: Place the baking sheet with the birds nest cookies in the refrigerator for at least 15 minutes to firm up.
Serve and enjoy!

Recipe Tips For Success
Melt the chocolate just before mixing so it doesn’t thicken before using.
Coat the balls well with the extra coconut to give them a textured, nest-like appearance.
Reshape the nests after creating the indent if any cracking appears. This helps the cookies retain their shape.

Coconut Birds Nest Cookies
Equipment
Ingredients
- 1 cup shredded coconut extra, for coating
- 3 cups shredded coconut
- ¾ cup sweetened condensed milk
- 3 ounces white chocolate melts melted
- 45 mini eggs
Instructions
- Line a large baking sheet with parchment paper and set aside. Place the extra cup of shredded coconut for coating on a wide plate or bowl and set aside.
- In a large bowl, combine the remaining shredded coconut with the sweetened condensed milk, and the melted white chocolate. Stir to combine, until you have a sticky dough.
- Use a cookie scoop, or your hands to scoop out 1 tablespoon portions from the dough. Roll each portion between your palms to form a smooth, round ball.
- Roll each ball in the reserved shredded coconut to fully coat for a textured, nest like appearance. Place each ball on the lined baking sheet, leaving space between each one.
- Use the back of a teaspoon to gently press an indent into the middle of each ball to create the appearance of a nest. You may need to gently re-form the edges if they separate. Place three mini eggs in the centre of each nest and gently press them into the mixture to secure them in place.
- Place the birds nest cookies on the tray in the refrigerator for at least 15 minutes to firm up.
- Serve immediately, or store in an airtight container in the fridge for up to 3 days.
