Line a large baking sheet with parchment paper and set aside. Place the extra cup of shredded coconut for coating on a wide plate or bowl and set aside.
In a large bowl, combine the remaining shredded coconut with the sweetened condensed milk, and the melted white chocolate. Stir to combine, until you have a sticky dough.
Use a cookie scoop, or your hands to scoop out 1 tablespoon portions from the dough. Roll each portion between your palms to form a smooth, round ball.
Roll each ball in the reserved shredded coconut to fully coat for a textured, nest like appearance. Place each ball on the lined baking sheet, leaving space between each one.
Use the back of a teaspoon to gently press an indent into the middle of each ball to create the appearance of a nest. You may need to gently re-form the edges if they separate. Place three mini eggs in the centre of each nest and gently press them into the mixture to secure them in place.
Place the birds nest cookies on the tray in the refrigerator for at least 15 minutes to firm up.
Serve immediately, or store in an airtight container in the fridge for up to 3 days.
