  • Peaches: Fresh ripe peaches give a lovely summery taste to these dessert bars. I don’t tend to peel them, but you can if you prefer.
  • Cinnamon and vanilla: Both add depth of flavor to the peach pie filling.
  • Butter: Use cold unsalted butter, cut into 1/2 inch cubes.
  • Yogurt: My secret ingredient for a moist, flavorful crust and crumble topping!

Equipment Needed

To make these peach cobbler bars you will need a 9-inch square pan, whisk, a pastry blender (or two forks) and a couple of large bowls.

How To Make Peach Crumb Bars

Here’s a quick overview of how to make homemade peach crumble bars. For the full recipe and ingredient list, scroll down to the printable recipe card.

Step 1: Preheat the oven and grease and line the pan.

Tip: Leave an overhang of parchment paper on all sides to make it easy to lift the bars out of the pan before slicing.

Step 2: Make The Crust. In a large bowl whisk the flour, sugar and salt until combined. Cut in the cold cubed butter until the mixture resembles pea sized crumbs. Add the yogurt and stir to combine.

Remove 2/3 cup of the crust mixture and set aside. This will be used for the crumble topping.

Evenly press the remaining crust mixture into the prepared pan.

Step 2: Prepare The Peach Pie Filling. In a large bowl whisk the egg, vanilla and cinnamon until smooth and well combined. Fold in the sliced peaches.

Pour the peach filling on top of the crust. Sprinkle the reserved crumb mixture over the top of the peaches.

Step 3: Bake. Bake for 35-45 minutes, or until golden on top. Leave to cool in the pan for 30 minutes before removing and slicing.

Recipe Tips For Success

  • Use cold cubed butter to make the crust and crumble topping. Don’t overmix – you want pea-sized crumbs.
  • Fresh ripe peaches are best – slice them thinly to ensure they cook and soften properly.

How To Store Peach Bars

I like to store peach bars in an airtight container in the fridge, especially in warmer weather. They will last for up to 3 days.

You can also freeze these dessert squares for up to 3 months. Thaw in the fridge overnight before serving.

Ingredients
  

FOR THE CRUST AND CRUMBLE

  • cups all-purpose flour
  • cups granulated sugar
  • pinch cooking salt
  • ½ cup unsalted butter cold and cubed
  • 3 tablespoons yogurt natural or Greek

FOR THE FILLING

  • 1 large egg
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 3 large peaches ripe, sliced

Instructions
 

  • Preheat oven to 350℉ (177℃). Spray a 9-inch square pan with non stick spray then line with parchment paper in both directions, leaving an overhang to make it easy to lift the peach pie bars out of the pan after baking. Set aside.

FOR THE CRUST

  • In a large bowl, whisk the flour, sugar, and salt together until combined.
  • Cut in the cold butter using a pastry blender or 2 forks until the mixture resembles pea sized crumbs. Add the yogurt and stir to combine.
  • Remove ⅔ cup of the mixture – this will be used as the crumble topping.
  • Evenly press the remaining crust mixture into the lined pan, ensuring you press into all 4 corners.

FOR THE FILLING

  • Whisk the egg, vanilla and cinnamon together until combined. Fold in the sliced peaches.
  • Pour the peach mixture evenly over the crust.
  • Sprinkle the reserved crumble mixture evenly over the top of the peach pie filling.
  • Bake for 35-45 minutes or until golden on top. Cool in the pan for 30 minutes then remove and slice into bars before serving.

Notes

Store: Store leftover peach bars in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Thaw in the fridge overnight before serving.
