A delicious mocha cake mix cookies recipe for coffee lovers. With a lovely vanilla flavour and chunks of chocolate thrown in, these mocha chocolate chip cookies are the perfect small snack to make at home.
Line 2 cookie sheets or large baking trays with parchment paper.
In a large bowl mix the warm water and instant coffee. Stir until dissolved.
2 tbsp instant coffee, 1 tbsp water
With electric or stand mixer, add the cake mix, eggs, oil and flour to the bowl and mix until you have a thick batter.
1 box vanilla cake mix, 2 large eggs, 1/3 cup vegetable oil, 2/3 cup all purpose flour
Fold chocolate chips into the mix by hand.

Use a cookie scoop, tablespoon or your hands to roll the dough into 24 balls and place on your cookie sheet. Place the cookies at least 2 inches apart to allow space to spread while cooking.
Bake for 6 - 8 minutes or until the cookies have small cracks on the top. Do not overbake!
Allow to cool before eating.
Notes
1. For a more subtle coffee flavor, add just one tablespoon of instant coffee to the mix.2. Only add the dry ingredient packet. Do not add the frosting.Baking tipsTo ensure your cookies remain soft, don't overcook. When you remove them from the oven they will be soft but they will firm up while cooling down.I use the Betty Crocker super moist French Vanilla boxed cake mix, but any yellow or vanilla cake mix will work the same.
