These refreshing key lime popsicles are creamy, tangy – and taste just like frozen key lime pie! A zesty homemade popsicles recipe that's perfect for easy summer desserts and poolside snacks.
In a medium bowl, whisk together the yogurt, coconut milk, lime zest, honey, and lime juice until smooth. Taste for sweetness and add more honey if you like a sweeter popsicle.
Fill each popsicle mold halfway with the lime popsicle mixture.
Sprinkle a layer of graham cracker crumbs over the mixture, then fill the molds to the top and top with another layer of graham cracker crumbs.
Insert the popsicle stick into each mold and freeze for 4-6 hours, until fully set.
When ready to serve, run warm water over the outside of the molds for a few seconds, then gently ease the popsicle out of the mold. Serve immediately.
Notes
If purchasing whole graham crackers instead of pre-made crumbs, you’ll need around 4 full graham crackers to make 1/2 cup of graham cracker crumbs. Use a food processor to make the fine crumbs.
Bottled or fresh key lime juice can be used in this recipe.
Regular (Persian) limes or a 50/50 mix of regular lime and lemon juice can be used instead of key limes (as they can be difficult to find).
