This delicious iced sugar cookie latte with homemade sugar cookie syrup is the perfect holiday coffee recipe to make this festive season. Inspired by the Starbucks Sugar Cookie Latte, it is a sweet and festive coffee drink you can easily make at home.
In a small saucepan combine the brown and white sugar, vanilla extract, chopped almonds, butter and water. Simmer over a medium-low heat for 5 minutes, stirring frequently.
1/2 cup brown sugar, 1 cup white sugar, 1 tablespoon vanilla extract, 1/4 cup almonds, 1/4 cup butter, 1/2 cup water
Remove saucepan from the heat and pour through a strainer into a jug or glass. Discard the almonds and leave to cool.
Store leftover syrup in a sealed jar in the fridge for up to 2 weeks (note 2)
Iced Sugar Cookie Latte
Add ice cubes to your glass and pour milk over the top.
1/4 cup milk
Add coffee and sugar cookie syrup to the glass.
3/4 cup strong brewed coffee, 2 tablespoons sugar cookie syrup
Enjoy as is, or add more milk and syrup to taste and top with (optional) whipped cream and/or sprinkles.
Hot Sugar Cookie Latte
Pour hot brewed coffee into your mug.
Add sugar cookie syrup and stir to combine.
Steam the milk and pour into your mug.
Enjoy as is or top with whipped cream and sprinkles!
Notes
1. For espresso pull 2 shots. If using espresso, you can add water or more milk to each glass to lengthen the drink if desired.2. The sugar cookie syrup can be stored in the refrigerator for up to two weeks. It may separate and/or solidify when refrigerated. Simply scoop out what you need and heat gently in the microwave or on the stove until it returns to a liquid form.
