Make the best chocolate heart cookies with this simple, no-spread sugar cookies recipe. These easy chocolate heart shaped cookies are perfect for Valentines Day, Mothers Day, or anniversaries!
Prepare the dough: In a large bowl using a stand or hand mixer, beat the butter, sugar, and vanilla until creamy and light. Add the egg and beat to combine.
Add the flour, cocoa powder, salt, and baking powder to the wet mixture. Mix on low until you form a smooth and uniform dough.
Chill the dough: Shape the dough into a flat rectangular block, wrap in plastic wrap, and freeze for at least 3 hours, or overnight in the fridge. Chilling is essential for the cookies to retain their love heart shape while baking.
When ready to roll the cookies, preheat the oven to 350℉ (180℃). Line 1 or 2 baking sheets with parchment paper and set aside.
Cut the cookies: Lightly flour your hands, rolling pin and your working surface. Remove the dough from the freezer and roll it out to about ¼ inch thick. Use a heart shaped cookie cutter to cut out the cookies. Re-roll the leftover dough and cut hearts out until all the dough is used.
Place the cookies on the lined baking sheet, leaving space between each cookie. Place the baking sheet in the freezer for 5 minutes or the fridge for 30 minutes.
Bake the cookies: Bake for 6-7 minutes or until slightly browned on the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
Decorate: Once the cookies have cooled, place the chocolate in a microwave-proof bowl and heat in 15 second increments, stirring each time, until just melted. Pour the melted chocolate into a piping bag with a thin round tip, or use a fork, to drizzle the chocolate across one side of each cookie. Decorate with themed sprinkles while the chocolate is still wet.
Cookies will stay fresh for up to 5 days in an airtight container.
